THE BOY WHO MET A WHALE

This month’s snack will be sure to power you through an epic adventure. Inspired by the tropical setting of The Boy Who Met a Whale, we’re making a no-cook sweet treat to give you the energy to continue with your quest! 

COCONUT ICE

You will need: 

  • 250g icing sugar 
  • 250g condensed mik 
  • 200g dessicated coconut 
  • Food colouring – optional 
  • Large Bowl 
  • Spoon 
  • Ice cube trays/board

Stir the condensed milk into the icing sugar until they are combined (the mixture gets quite stiff – nothing to worry about)  Stirring in the condensed milk to the icing sugarCombining the condensed milk and icing sugar
Now add the coconut – make sure it goes all the way through the mixture – if it’s too stiff to stir in easily you can use your hands  Add in the coconut to the mixture
The traditional way to prepare coconut ice is to split the mixture in half at this point and colour half pink, then roll out both, leave to set (3 hours) and cut into squares. 

We decided to use ice cube trays and leave all the mixture a lovely coconut colour. 

Shape the coconut ice to your preference
Once the mixture has had time to set – either cut it up or remove it from the moulds and enjoy with your book club chat.  Once set, shape or cut to your preference
