Honey’s Hive – Snack Recipe

We couldn’t resist a delicious honey cake treat for this month’s book club snack! 

Honey Cake

You will need:

  • A mixing bowl 
  • Scales 
  • A pan 
  • A spoon 
  • A 20 cm cake tin 
  • An oven 
  • A skewer 
  • A cooling rack 


  • 250g clear honey plus 2 tbsp for glaze 
  • 225g unsalted butter 
  • 100g brown sugar 
  • 3 eggs 
  • 300g self raising flour 
  • 1 tsp cinnamon, dried ginger or other spice   


  • Gather your ingredients. Cut the butter into pieces and put in a pan with the honey, and sugar – melt together then leave to cool for 20 minutes Preheat the oven to 160C (140C fan) and grease your baking tin.



  • Add the eggs to the pan of cooled mixture and beat together with your spoon 
  • Sift the flour and your chosen spice into a bowl –add the egg and honey mixture and mix until everything is combined and the mixture looks a bit like pancake batter.


  • Pour the mixture into a baking tin and bake for 70 -90 minutes until a skewer pushed into the middle of the cake comes out clean.


  • Turn the cake out onto a wire rack
  • Warm the last 2tbsps of honey in a pan or microwave until very runny and spread over the top of the cake 
  • Leave to cool and then enjoy with the book!
